Minestrone has always been my favorite soup, but Laura Vitale's Minestrone Primavera is the go-to recipe. It is such an easy and quick recipe. You can go crazy over what vegetables you would like to to have in your dish. Be creative. Cooking is your time to have fun. Nothing can be wrong.

This is my fourth time making this lovely and refreshing minestrone. I love it. My family loves it. The vegetables used this time were celery, zucchini, asparagus, carrots and garlic stalks. These are pretty much the main vegetables used every time I cook this minestrone, but sometimes I add frozen peas, corns and more. It depends on what are available in the supermarket.
One thing I must emphasize is the white wine. Please use it. It would make a world of a difference as it gives you this amazing aroma and taste to the soup. You will not regret it. Be brave, go ahead and pour that wine in your pot. Also, please make sure season your minestrone with salt and pepper in every step so that the taste of your minestrone will be well rounded.
Give this recipe a go. It is not just good for the day that you need something warm in your belly, but it is an amazing dinner for weight loss. Trust me... I have been there and done that. It works! What would make a better weight loss food than this? You even get to have parmesan!
